Nooruz is important holiday for Kyrgyzstan and Kyrgyz people from ancient period. It is celebrated annually on March 21, which, according to ancient calculations, is considered the equinox day in the country. The evening before, most locals spend at the huge cauldrons, where the golden-brown "sumolek" is cooked, a porridge-like dish made of wheat, previously sprouted and ground. There is a legend that if you make a wish while cooking sumolek, while stirring the dish, it will definitely come true. The dish itself has a peculiar taste, which, thanks to the addition of nuts, sugar and other spices, acquires an unforgettable relish, memorable for those who have tried it for a lifetime.
